Barleywine...

is a holiday sipping beer that is very strong flavored and higher in alcohol, approximately 7-9%ABV (sometimes higher). The "vinous" (wine-like) background and finish of this sweet beer along with an alcohol content in the range of most wines lend the name "barleywine" to this strong ale.

Extract brewers luck into an easy shortcut to this complex ale...simply use 3 "Old English Ale" extract kits to make 5 gallons of barleywine. EASY!

All-grain brewers are in for a challenge...I suggest you find a recipe that will allow you to mash enough grain, or do a partial mash and supplement with extract "kickers". I decided to challenge SABCO's "Brew-Magic" with the following recipe, requiring a mash of 43 pounds of grain!

All-Grain Recipe, 10 gallons, infusion mash method.

O.G. = 1.074, F.G. = 1.020, ABV%= 7.6, Wyeast 1214 Belgian Abbey, 0.5L starter, IBUs = 85.73

  2. Crystal Malt 80L, 3 lbs
  3. Vienna Malt, 3 lbs
  4. Carapils, 3 lbs
  5. Crystal Malt 2.5L, 2 lbs
  6. Chocolate Malt, 1 lbs
  7. Black Patent, 1 lbs
  8. Acidified Malt, 3 oz.

Hops

  1. Cascade, 8.3%AA, 2 oz, whole plug, 120 min
  2. Cascade, 8.3%AA, 2 oz, whole plug, 90 min
  3. Cascade, 8.3%AA, 2 oz, whole plug, 60 min
  4. Willamette, 4.9%AA, 2 oz, whole plug, 20 min
  5. Yakima Goldings, 5.5%AA, 2 oz, whole plug, 0 min

Other ingredients:
