Nothing smells as good as a batch of beer being boiled, with fresh whole hops added to the mix.
Boiling magically transforms your wort into beer. It purifies and mingles the flavors and aromas. Hops are added during the boil to impart their delicate bitterness, flavor and aroma. Frequent stirring should be employed to prevent the sugary wort from carmelizing on the bottom of your boil pot. A watchful eye can prevent boilovers, however it is fabled that you aren't really a homebrewer until you've experienced your first boilover. The boil should last from 60-90 minutes. Count on losing 1 gallon per half-hour of liquid to evaporation...this can be compensated for when collecting wort during the sparge, or you can add hot liquor (water) to the boil in an emergency. Hop additions are normally planned at predetermined intervals (see "Hops" on the main page). Most experienced homebrewers enhance the enjoyment of the boil process by sampling previous batches of homebrew.
